Ethiopia Kochere District Yirgacheffe - incredible aroma, bright lemony
taste with wild fruity notes. Roasted about as light as I ever go. I've
been drinking Centrals and Konas for a while, so this was quite a change of
pace, but delicious! It's long since gone from Tom's offerings, alas.

Thanks for the reminder. This was a favorite of mine. I bought 5 lbs
and went through it pretty quickly. Your post led me to dig around in the
stash AND I found about a 1/2 lb remaining in the bag. I'm going to roast
it today for my enjoyment this next week. Happy Roasting. Josh

I didn't think it was that great, until today. Last night I roasted my last 2 lbs of the Kochere as light as possible-turned off the heat in the grill (RK roasting) when 1st crack started, and opened the lid and let the drum spin in the breeze for a minute until the cracks stopped. Barely a city roast. This morning the cup is sweet lemon custard as a single origin espresso. Delicious!

Charlie,
I don't have an espresso machine, but I love the lemony flavor as it cools
from the FP. Wow. At a certain point, the cup tastes like tea, no coffee
flavor or aftertaste at all. It's totally wild. But I love that lemon
flavor and how it develops as the cup cools. And yeah, I went real real
light on it as well... great!

Kenya Peaberry Kirinyaga - Gakuyyini. Roasted 5 days ago to FC++ and brewed
in VP. Definitely get the winey berry notes and wood in both the fragrance
and cup. The wet fragrance also had the clovey spice Tom mentions. I don't
pick up the raisin, humus or caramel sweetness. As the cup cools there's
much more complexity to it. A couple of minutes after swallowing there's a
nice smokey flavour left on the palate. I haven't smoked in many years but
this would go well with a very good cigar. A very nice cup. Not my favourite
but I did over roast this batch. I will roast the next batch to C+.
I brewed this two days ago and had more bittersweetness in the cup and less
complexity. I let it sit to see how it would change. At this roast level it
is a better cup after 5 days than after 3 days rest.

This is the very last of 2# of '05 Costa RicaTerrazu La Minita Estate.
Getting to C+, I stretched 1st Crack to start at 11:10 into the roast of
450g using the HG/MB (mixer bowl.)
One solitary snap at 11:10 ! When NoThing else happened until 13:02, I was
wishing for the weed burner and propane bottle to be at hand instead of 6 ft
away. I really would have lit the afterburner except that the striker was in
one of my tool boxes in the Bronco.
Don't think I really got through 1st at 19:00, but 2nd was starting- Yeow!
It was already smoking lightly before 1st started, more intense now. I guess
3 year old beans smoke early and snap late. The early Steinway promised a
lot if I'd just wait for the train to pull in to the destination station.
This afternoon's show was worth the wait! 25g flash frozen, ground at 50 in
18 oz of boiling (201 F) water, for 4 minutes' brew- Ohh, la la- this is
the reason not to let someone else roast their beans of questionable dubious
origin and age for your coffee drink
Cheers, Mabuhay -RayO, aka Opa!

A strong cup of five day rested city plus Yemeni, AeroPressed and enjoyed
with a bland lunch.
I missed out on enjoying this on days three and four, where I suspect the
peak fruit flavors would occur, because of a food poisoning incident that
hit me with full force Tuesday night.
I've been drinking water and homemade Gatorade and eating a bland diet since
then. It's really good to be back, and this strong coffee seems to have a
strong effect on me now, almost intoxicating.
Looking forward to some espresso this weekend, the Liquid Amber espresso
blend I roasted to full city plus on the 8th was tasting pretty good last
weekend, I froze five (5.3) of the ten (10.7) ounces that the thirteen
(13.3) ounce batch yielded for later enjoyment, but I either need to get my
act together to pull shots on the La Peppina during the week or really enjoy
it this weekend. Maybe I'll have to get out the funky La Peppina steaming
wand hat and make the Wife some Cappuccinos this weekend (and help mollify
her over the purchase of said machine). Once I repackage the PID in a
smaller, counter-friendly box it'll be easier.
Here's Kaiser's recipe for homemade Gatorade, for those in need of
rehydration:
1 Quart water
1/2 tsp baking soda
1/2 tsp salt
3 - 4 Tbsp sugar
Crystal light or unsweetened Kool-Aid for flavoring
I did not find it very appealing with the strawberry flavored Kool-Aid.

Chris -
I hope all is well, health-wise, with you. I was forced (for health reasons)
to go
on a ten day fast (well, I'm including the days starting & ending that I had
some
fruit juice and a few pieces of fruit) about a year and a half ago. Was
amazed I
lasted that long (it was either that, or a stay at the hospital).
Those first few cups tasted oh, so great for me.
Stay in good health - food poisoning is no joke. My daughter, in her teens,
had
food poisoning when she ate raw cookie dough (not homemade, btw). She's in
her
mid twenties (eek - how'd that happen?!) now... one of many memories of
sleepless
nights at the ER...
