I realize it's a little late in the day to post this - but, what the heck -
I'm having my cup now, so I thought I'd share this with you guys.
Earlier today, I brewed a cup of Ethiopia Dry Processed Limu, roasted to,
I'd say, either FC or FC+. I roasted this (along with one other regular and
one decaf) just yesterday, but typical with my planning I ran out (I forgot
my son was working on a final paper - he drinks lots of coffee to help his
concentration, and now his palate is spoiled. :D)
So my expectations weren't that high (I realized they need a longer rest) -
but ugh, I had to toss it. Weak (my usual-non-drinking son requested a cup,
and I think this more with his tastes) and flat. Brewed up a second with
more coffee (French Press this time, instead of the Chemex). Nope - it was
stronger, but not strong enough, and no depth at all. That went down the
drain, too.
Since I spent the morning doing my Thanksgiving grocery shopping (in an
attempt to avoid the stores entirely next week), and putting the chicken
breasts in brine (going to prepare stuffed chicken breasts, and freeze them
until Thursday) before I soak them in make-believe buttermilk (lemon juice
and milk), I decided to give myself a little treat.
Brewed a French Press cup of the other coffee I roasted. Of course, I forgot
to label this one, so again, I have a mystery coffee. (I've done this
before)
No matter - it's much better. Not perfect, and it may improve with a longer
rest - but it has a deeper flavor, the kind that says, yup, it sure ain't
DD's!!
Got a small plate of sharp cheddar (Vermont, of course), some low-salt
Triscuits (who knew they made them like this!? Goes to show I hardly ever
splurge on something like crackers!) a few fresh blueberries (not so long
ago these came in packages three times as big as these little 'gourmet'
plastic boxes - and cost less than most now, close to the same 'bargain'
price of $1 that I spent!) and a couple of almonds (yikes - now *that's* a
splurge!).
Oh - this is flavor heaven - and I wouldn't trade it for a meal in a four
star restaurant!

I Pulled A Couple Shots Of The monkey Blend Roasted P4d On The Behmor From The Fifth Of Nov! Lasted A Lot Longer Than I Thought! Still Good Tho. Still warm from the roaster -- Colombia Perros bravos de Huila. Brewed in a vintage Silex vac pot with a Cory rod. Popper-roasted this morning to just shy of second crack, total roast time: 10:05. This is one of my favorites lately, but clearly under-rested in this case. I just wanted to see how it is, straight from the roaster. Little body and a sort of metallic tang, with just the barest hint of the fruitiness that will develop in a few days.

MMM.
I was without fresh roast for a few days and I was very sad.
I enjoyed a few cups of the El Salvador Finca Malacara and a few cups  
of Daterra Yellow this morning (I had to give a presentation really  
early). The Finca still needs a little more resting I think. The  
Datera was delicious though, the "Almond" description from the SM  
website was dead on. Slightly sweet, very very smooth, a great coffee!  
Both were roasted on Tuesday afternoon, so still very fresh.

pulled a shot of 50% Nicaraguan peaberry and 50% IMV just to see what would happen.  not bad, i think the nic mellowed it out with a choc undertone with the IMV wild berries still present.

Hi All,
I know it's late in the day, but Maria needs a test post from me to
troubleshoot a list problem, so I'm taking the opportunity to post about my
morning, and now afternoon, cup.
I roasted some the the Anohki Liberica this past weekend.  It's been months
since I enjoyed this coffee - I really missed it!  Since I'm out of practice
for this bean, I took it a bit darker than I'd like, but it makes my husband
happy since the darker (FC) roast really brings out the tobacco leaf flavor,
which he loves.  I usually keep it to a true City to bring out the wildest
of the crazypants fruited flavors, but I can enjoy it this way too.  I know
that in a couple more days of rest the tobacco will fade and the fruit will
be more pronounced, so I have even more to look forward to.
I do love this coffee, and I'm glad I still have a couple of pounds in the
stash.

Today, which is tomorrow from the aspect of your original post, I have a
little Vietnamese left in the jar.So, tomorrow I'm blending some of the VC
with IMV. [~3 : 2] Great aroma but missing some body- I happened to short
the basket. Several beans short of a basketful before I put them in the
sandwich Ziploc for a few minutes in the freezer.
I just finished yesterday's blend, close to 1 : 1. Ground at 17, after
packing and tamping the grounds, I put a paper filter disc on top of the
coffee puck in the filter basket. The purpose is to prevent grounds from
floating up the incoming hot H2O column, necessitating a prolonged flush to
clear from the group assembly.
It works.
