I've finished the comparison of the current Yemeni offerings which have 
been roasted and brewed as parallel as possible.  All are great but my 
preference goes to the Ismaili and Mattari (same degree of preference) 
with the Sharasi in third place.  One of my "Customers" always asks for 
a Yemeni in a consignment.  Great choice!  Bernard G.

I did a small test roast on the Mattari to C+ and was wondering if you 
went the 72 hours rest as Tom recommended?

I'm currently drinking a cap (triple shot in a six ounce cap) with a
three, two, one  blend of Brazil YB, Sumatra BB and Yemen Sharasi.
The Sharasi replaced my recent blends using the same ratios but with
IMV instead of the Sharasi.
All three beans were roasted with the same profile, reaching 1st at
10:30 and continuing with a slow 7 per minute ramp from the beginning
of 1st to end of roast.  EOR was 440 for the YB, 435 for the Sharasi
and 445 for the BB.  Today is day five from roast, I've been pulling
shots from this blend for two days now and I noticed a substantial
maturation of the sharasi influence today, less sharp - more full
flavored (my descriptive abilities are lacking).
I'm impressed.  The blend has retained all the positive attributes of
the previous blend using IMV with an entirely different 'sparkle' on
top ...... not necessarily better but of the same quality in a
different direction.
