Hello one and all -
We have received a lot of requests over the years - and it looks like 
this summer it will finally happen.
Sweet Maria's Coffee will offer a short Introduction to Comparative 
Cupping class. This two-hour class will cover basic coffee cupping 
technique and the skills to identify characteristics in coffee (such 
as acidity, body, etc).
The class is free and open on a first-come, first-served basis.  The 
same class will be offered on three Fridays in July , July 11th, 18th 
and 25th, from 2:30 to 4:30 pm.  Class size is limited to 12 persons. 
Because of limited class size, registration is limited to one slot 
per person.
Classes will be  taught by Tom, Derek and Josh of Sweet Maria's Coffee.
To register, please email to sweetmariasclass and tell us 
in the subject line which class you want to sign up for.  We will 
confirm your place in the class by email.
I am emailing the homeroast list first - and will post the 
announcement on our home page in a while.   Please direct all 
questions and requests to that sweetmariasclass   address.

Said only half in jest.  Tom, if you ever do venture to such a 
non-exotic locale as Washington DC for a trip (say the next time there's 
a trade show here), I would gladly find a home/shop/training center/cafe 
and supplies for you to teach a class.  I'd bet that many on this list 
would do the same.
Not that you have any time for that ;-)
Seriously--that's a great offer.  I may have to find a way to cajole the 
Mrs. into a trip out to Oaktown--I need to see my boys in the Silver and 
Black.  Will you be repeating the class during football season?

I'm wondering if, in the future the classes could be lumped into a one or 
two day block (four hours each day?) for those of us who might consider 
traveling to attend.  Four Fridays would not work for anyone except those 
within a day's drive.

checked to see what a couple plane tickets would run us. I've never been to
California and what a great excuse this would be. However, I don't think I
could talk my husband into it! He's the practical one, I'm the impulsive

We did the 'Magical Mystery Brew' in conjunction with Barry Jarrett and 
Riley's Coffee and Fudge in St. Louis.  It was really an alt.coffee thing, 
but Barry was the brawn behind the scheme.  He roasted and sent samples of 
green to all participants.  I think there were something like six samples. 
Each participant was to identify the coffees.  It was a real hoot.  Everyone 
enjoyed it.  Above all, it was a learning experience.
Now I would think a nationwide cupping could be managed in a similar way. 
For an entry fee to cover shipping, beans and handling, several samples 
could be roasted and shipped along with the green counterpart.  Several 
three way cuppings could be performed, without knowing what the coffees were 
OR what the taints might be.  There are many ways to do cuppings.  Maybe 
pick between three Kenya's and choose the one that is the best.  Maybe 
choose between two great Guats and a baggy lot.  Of course, as it real life, 
taste is subjective, but if it's between two C grade Kenya's and a microlot 
of select beans, then it might be interesting.  I would definitely be in for 
something similar.  It would almost surely need to involve local 
homeroasters to help Tom pull it off, but wouldn't it be fun?

This is interesting. A presentation of the cumulative knowledge, experience,
ways and means of the best coffee detective on the planet- involves no
apparent effort or value. The class just happens every week with no effort
or preparation. Tom just has to let people in and provide free groceries.
Home movies do involve little effort to produce, starting with a vacuum for
technique and experience in videography. Zooming in and out with a Canon
1218 Super 8 camera might be cute, especially if the audience had eaten just
before watching the show.
Videographers ply their craft to produce an informative video presentation,
and invest in tens of thousands of dollars in equipment just to get started.
People that will sell you their home movies for cheap are called vidiots.
The people that buy them are just...

Having had the opportunity to cup with Tom, I would say the video is a bad
idea!  At best you are are going to get a typical look at what almost
everyone does.  You are reducing one of the 5 essential senses down from
a three dimensional experiences to a two dimensional one, that is sight.
You cannot capture smell or feel or taste.  You might catch some of sounds,
but again you are reducing it down to reproduced sound.  Consider the
following fact, my first mentor in homeroasting Mr. Sivetz charged $800.00
for a half day of cupping class, and you had to have 4-8 students for him to
give a class.  That is 1980 dollars not our inflated 2008 dollars.  So
consider flying out for the experience.  Tom is offering a bargain.  Price
cupping classes from other professionals.  I am sorry a video doesn't cut
it.  I am hoping I can schedule a trip to Oakland next month!  I don't think
it is fair to ask him to not only do all the hard work of doing a cupping
class free and then try to tape it.  What really isn't fair is the reality
that if he does video it, he is going to get a barrage of questions that
would have been answered if you had taken the time to go to Oakland.

couple of orders started me down the rabbit hole.  I'd been meaning to 
get to one of their cuppings, but was unable to make it until yesterday.
Each week, all of their cuppings, at all locations, cup the same three 
coffees.  Roaster's choice.  Last week was a classic set for an intro to 
cupping--Guatemala Huehuetango, Kenya Auction Lot, and Sumatra Aceh 
Gayo.  Three distinct coffees, which was great for half of the folks who 
had never cupped before.  After everyone cups and keeps their thoughts 
to themselves (using the CC cupping form), everyone sits down and 
discusses their impressions of the coffees, with the leader writing 
everything down on a whiteboard.  Lots of talk about the specific 
origins (a bit of marketing there...), but overall a good discussion.  I 
got a whole lot out of it--many of the folks had names for sensory 
perceptions that don't come naturally to me.  Cupping is so much like 
learning a new language.  I nailed the origins, but was nodding my head 
many times when I heard a descriptor that I sensed, but couldn't find 
the right word.

You got it- I used up the last can of PC before that. At the time I had
found it necessary to read the code on 4 non-coffee-related emails.
Purporting to present interesting facts, they were also rhetorical
suggestions- demands that I arrive at a certain conclusion after reading
some unsupported facts that I should pass on to everyone on my mailing list.
Not on my boat.
It's totally different, no longer having an active security clearance. I can
actively read things, think about them and even form my own ideas. They
might be rong but they're mine. Some of what I do coffee-wise violates
popular notions.
What a jolt when I was thoroughly cleaning my Crapesso. The bloody thing
popped and sprung a leak. The valve/ heater/ group body cracked. Word came
down that I was misusing it.
"Oh, no. Sorry, sir- we don't sell parts to the public."
"Thank you so much. They'll be ice skating in Hell before I consider any
more of your sorry junk..." Besides- it's almost dry with two Duesenberg
hose clamps around the valve body.
My Sunday morning shot will be Uganda AA Bugisu, FC+ on 16 Jun. It was a
monster for  yesterday's brunch shot

Thanks Chad for the report on CC cupping.
I live in Raleigh, and there's a CC in Durham, about 25 miles away. I've
been wanting to go for a long time, but Fri. mornings have been impossible.
I have a few Fridays open now, so I'm going to check it out. CC looks like
the most serious coffee establishment anywhere around here.
