Topic: Small cups from big pots (4 msgs / 101 lines)

Going off of my comment on the tradition thread, I had a thought:  When brewing using Chemex (and F.P. too) does it hurt if you brew in small amounts using a larger size?  For example, if I only fill up my F.P. half way, is there any disadvantage?  What about Chemex?  If I only brew 16 ounces in a 50 (or however many ounces the big guy is) Chemex, or 12 ounces in a 32 ounce F.P. am I screwing things up?  I can't say I have ever really noticed a flavor difference, but I wondered if someone might have some insight on this.

Hi Bry,
I am currently enjoying my Shanghai roasted Sumatra here in Minneapolis with
a Bodum Solo 1cup.  I'll drink 3 or 4 this morning before I'm off. I have a
large and small chemex.  Never happy making a small amount in the large
unit.  It seems that it cools faster for me when an oversize is used.

I think it depends mostly on the brewing type.  French press shouldn't
matter much at all; it's the exact same brewing process, just in a different
size.  But drip seems to suffer with smaller amounts; usually the brewing
apparatus is designed to drop a constant rate of water over the grounds
instead of dropping all the water within a defined period of time (as SCAA
suggests-- and we know they have the Word of Coffee :-D).  I am pretty sure
that moka pots don't do well outside the canonical amount of water and
grounds; that's why there are so many different sizes.  Vac pot suffers
somewhat because a larger portion of water gets left in the bottom during
brewing, but you have more control over all the other variables (mostly via
infusion time).  Maybe AeroPress isn't affected, but it's such a small
amount anyway.

My press suffers from the same problem that you noted for the vac pot.
 There is a space beyond the reach of the plunger at the bottom of the
pot and the less I brew in it the larger the proportion of water is
left in that bottom area where the grinds get pressed.
Bryan, as I'm sure you have gathered from all our comments, every
brewer is going to have an ideal volume.  Some methods - press and
pour-over come to mind - are going to be more forgiving but even those
have a limit.
