I got the idea from A) IIRC Stumptown serves a class of regular water with a
shot and B) most barista competitors serve sparkling water to the judges.
(usually a bottled brand not soda syphon) FWIW I also use soda syphon
sparkling water as palate cleanser cupping. But usually for Italian sodas
and Cremosas use a can of Shasta club soda, 12oz can just right 16oz bev',
actually costs a bit less than using soda syphon sparkling water! Used soday
syphon for awhile, but went back to the cans mainly because overall takes
less time and getting my girls to properly fill and charge the syphons tends
to be a bit of a challenge. (Tended to overfill with filtered water which
has "interesting" consequences that scared the heck out of them, great for a
chuckle though:-)
