Just savored a large morning mug of Yemen Mokha Sharasi, roasted (IR2) to a
City + 13 days ago.  It has been getting better every day for the past four
days.  More sweet, more smooth but also more nuanced.  Ater ten days rest,
the peach undertones in this batch began emerging.  This bean is unlike any
other I have roasted; I would say the the two week rule is turned on its
head. I will be letting future Mokha Sharasi roasts rest for a week and a
half.

That is perfect to hear.  I just roasted up my last 20 oz, and 
sampled it yesterday at 2 days.  Ok, but not what I recalled.  More rest it is.

3) From: Edward Bourgeois
Looking for suggestions on SO espresso with this. I roasted some about
a month ago maybe 15secs into 2nd but it all got used on day 4 and I
don't think it hit it's prime. I want to use it for some friends
visiting next Sunday. Thought 7 days would be adequate for the darker
roast rest. Tom suggested FC+ - Vienna. Was thinking of more towards
the FC+ maybe 10 secs into second crack. Any thoughts.

I wouldn't go any further into 2nd than you propose (eg. 10 seconds),
myself.  I was really on the brink of FC with this last batch and i thought
with appropriate rest, it really hit a sweet spot.  But then I was using a
French Press and not pulling shots.
