Topic: Monday morning cup / Question (3 msgs / 66 lines)

This morning I had a Panama Don Pepe. I cupped this at SM during the  
second cupping and loved it. Nice light blueberry. It was the first  
time I have found the blueberry and really liked it. I got two ponds  
on the spot. Well today was day five after a City + roast in my Behmor  
using P1. I smelled the slightest BB, but no flavor. Or maybe I just  
wanted to smell it. It has not become the cup I tasted and was  
wondering if anyone has any suggestions on profiles and such.

I would try a P-2 profile to bring out more of the subtle flavors of the
coffee.  Blueberry is a delicate flavor in most Arabica coffees (not
Liberica), so I would suggest that you make sure you have the right grind.
Do you have a good grinder?  I am sure Tom was using his Ditting for the
cupping.    What brew method were you using?  Using any kind of paper will
pull those oils out of the coffee.  Was your brew temp hot enough?  I
usually get the most blueberry flavor from a coffee at 12 hours rest.  I
hope my musing over your issue in this email helps.

Les,
Good thing I stopped to read my email. On the way out to try another  
roast of Don Pepe.
I am using a Rocky, near the corse end of the scale. This morning it  
was a single cup pour over using a #1 paper filter (could that be it?)  
I have also used a my drip machine with a gold filter. Water temp  
about 198-202.
