Topic: Ethiopian Koratie: WP vs. DP, cupping #2 (5 msgs / 110 lines)

Yesterday's side-by-side tasting was done on a mere 6 hours of rest.  However, I compensated for the excess CO2 somewhat by grinding into two cups & letting them sit for 30-40 minutes before adding water.  They were, as I said, very good.
Today I tried again--this time on 24 hours rest.  The DP continues to impress with the fruit, but it's more strawberry than blueberry--particularly as the cup cools.  The WP, however, was amazing in its depth.  Floral aromatics were great.  The cup has a lovely body and (at first) a peachy tone, which turned more sweet after a couple of minutes--like the difference between yellow peach at first and white peach a couple minutes later.  The surprise was maybe three minutes after that:  I was suddenly drinking intense jasmine tea!  The jasmine lasted until I finished the cup (no spitting here--this was my afternoon coffee).  The jasmine flavors were delightful.
This comparison is a lot of fun.  Thanks for getting these two, Tom.  Thanks also for the cupping class, which has enabled me to MUCH better identify what I am smelling/tasting in the cup.

I have both WP and DP Koratie freshly roasted last night waiting for me to
get home from work to cup.
I think I'm starting to feel sick and will probably have to leave work early
;-)

3) From: Tom & Maria - Sweet Maria's Coffee
I have found that the wet-process is really amazing at a very light 
roast, and I am afraid some people may not like that roast level. A 
true City roast is ideal ... enough time to confirm 1st crack is 
over, then stop the roast immediately. A behmor might "coast" too 
much here, so opening the door or even removing the drum and cooling 
outside the roaster might help. -Tom
