Ah, yes if fresh peaches picked up right at a roadside stand on the western  
slope of Colorado are pure heaven grabbing some ripe Rocky Ford cantaloupe on  
the eastern plains is the next best thing. And you can either with your 
coffee.  As for 15 minutes on the IRoast, I have experimented with doing five 
minutes at  325, 5 minutes 350, 2 minutes at 375, 2 minute at 400 and 1 minute at 
425  and the result isn't bad, though it's probably best to cut to 11 minutes 
and  make adjustments throughout to get a lighter roast.
