Your comment on smelling the green Gesha raised a thought I have had 
lately. I am wondering if coffee vacuum packed at origin might 
actually benefit from a couple days of breathing time before 
roasting. The smell of vac packed coffee (well, you didn't get 5 or 
10 lots vac packed but we did) is much more dynamic and fresh. but 
coffee in jute has time to "equalize" with its environment. It's just 
a thought, based on an Australia sample I had lately that was really 
odd the first time I roasted it, then the second time I roasted it 
(after 3 days airing out) it was better. I am going to do some tests 
to see if some air time helps vac packed coffee...

I'd wager whether vac'd greens would benefit from "airing" for a few days
before roasting depends on when in their greens "aging" they were vac'
packed. Going to take a whole bunch of controlled testing to confirm one way
or the other!

I have found that poking a hole in the vac sealed bag a few days prior 
seems to give me a better tasting roast.......
just my .02 worth and as always YMMV
