Topic: Behmor drums and their use(s) (8 msgs / 190 lines)
1) From: Alchemist John
I just had to chime in here about the Behmor drum and their uses. So
far, I have only used the standard mesh drum, but it has done a fine
job on the following.
Coffee
of course, then
Cocoa beans
popcorn
veering off a little
pumpkin seeds
hazelnuts
and even further
crickets
large meal worms
Very nice and successful for all. Truly a versatile roaster.

Oh maaannnnn..... Crickets and meal worms? I'm not sure I want to know,
but.... Can you enlighten us? What do you do with roasted critters?
But, with all respect, hasn't your roasted seed avocation veered a bit off
course?? (grin)
Crickets and mealworms? Must be April 1st. Here I thought it was summer...

So how do crickets and large meal worms differ in their 1st and 2nd crack
characteristics? Or do crickets chirp instead of crack?
Don't tell me, then SO chocolate covered?!?! :-)

Nope, not April 1st nor a joke. Entomophagy.
Long story short, I have a couple cook books on the subject, and a
pair of teenagers guests took to the idea and we planned and made a
cricket and mealworm pizza!
Stun them (in insects, not the teenagers) in the freezer for 5
minutes or so, pop them in the drum, P1 about 7-8 minutes. Crispy
critters! Wonderful "pork rind" aroma. Mostly neutral flavor, but a
great source of protein and the cricket exoskeleton has a great
proportion of fiber and virtually no fat. Talk about the perfect
food. Insects - the new tofu!
No cracks (per MM), nor chirps (especially with freeze stunning), but
the wings and legs mostly crisped off very nicely.
We were going to have large Wax worms, but the store was out :( Next time ;)
Oh, and we have video that we will get up on utube at some point.

Oh dear - someone please invite Anthony Bourdain over to Alchemist John's!
So I guess in different parts of the world, this is normal... yuk.. I'll

Interesting, though...and who would have thunk that our Alchemist John would
be so... er.. adventurous? (did I hear someone mutter "insane"? stop that -
now!! ;-)

I buy eggs and goat milk from Alchemist John, maybe I ought to
diversify my order. Oh, I do get Cacao beans from him too.

8) From: Seth Grandeau
My apologies for getting back on topic here :) but I just did a roast of
Guat Ocana. This is a VERY chaffy coffee, but fairly large beans, so I used
the large grid drum. This definitely removed a higher proportion of the
chaff than the small mess drum does on equally chaffy coffees. There was a
little chaff left on, but not much.
