Topic: Behmor/How to measure a Roast for Clients (7 msgs / 152 lines)

For years I roasted for me and a couple friends... and taught a few  
people.. but currently I have been getting clients... and I have  
forgotten how to measure for a correct lb and how SM measures theirs..  
I hated to ask on the list and look foolish since Im supposed to know  
this... but what I have been doing is roasting coffee by 16oz (1 lb)  
by volume in 2 cup pyrex.. then however it expands is how I deliver..  
usually a little more in volume but weight drops off. is there a rule  
to go by ??  hehe

2) From: Coffee
The more you roast it, the more weight loss you have and the greater  
volume expansion... With a City+ to Full City roast, I expect about a  
14% weight loss, but some the beans surprise me... So for 8 ounce  
start, I expect to get a about 6.9 ounces roasted. I don't know if  
that's a rule of thumb or not, YMMV.

I make the bold assumption that I am loosing 20% or 6 oz from an 8oz batch.
Three batches make 18 oz leaving me with 2+oz to enjoy. Reality 18.9 to 20.7
oz. from the three batches. Next problem.

Morris,
I am selling some coffee on the side.  The deal I make with my
customers is as follows.  "I am roasting a pound of high quality
greens for you,  I don't know the exact weight of the final product
because it varies"  You will be getting between 12 and 14 ounces of
the best coffee money can buy.  Cost is based on what I had to pay for
the green beans."    It avoids a lot of hassles and I have not lost a
sale, or had a complaint.

I like that! That's an excellent way to deal with this problem.
I'm going to save this for future reference. I haven't started selling any
coffee, and don't know if I will (the logistics of trying to sell what I
roast stove top baffles me...)
I am, however, trying to start selling my biscotti. Just trying to come up
with figures is enough to make my brain explode - I use brandy, sometimes
rum, lots of nuts and dried fruit, and above all, nothing artificial. Gotta
make sure I don't need to charge $20 for this - I have no idea how much it
actually costs me.
All I know is I want them to taste better than anything I've ever bought...
lol, hopefully I won't end up *owing* money to do this...

In my trusty Bejmor, I almost always load a batch weighed at 324 grams
of geens. (This is 2 cups of greens, kind of mounded up a little.)  A few
always fall out of the drum. About 278 grams of roasted are left when I
roast to just before 2nd crack begins.
