I think I probably ran the cracks together in the  wok and didn't know it,
but I'm learning!
Tonight I used the new 912 digital cooking thermometer in the mail and it is
perfect for the stainless steel stovetop roaster - It sticks in the hinge
hole and touches the bottom of the pan just outside the diameter of the
paddles. I'm guessing it's really in the beans!
Roasted 1/2lb of Brazil Cerrado DP lot 242 (aiming for FC+). Took the
roaster up to 400 and dumped in the beans. The temperature dropped to 232
deg and then continued to rise very nicely for about 11 minutes. I started
getting smoke and first crack about 370 deg (8 min) and it continued to past
400 deg (10 min). Temperature rose slowly between 11 min (414 deg) and 12
min (419 deg). I think I heard 2nd crack about 446 deg (13 min) and the
beans reached 454 deg at 14-15 min when I took ithem outside.  So I believe
the temperature readings and think I'm getting the hang of it!  Bean munch
is OK, no burnt taste. I'm anxious to taste it tomorrow. I think I'll try
turning the gas down by about 1/2 a mark at first crack next time.  THIS IS
FUN!
