Topic: My Geshas arrived (21 msgs / 493 lines)
1) From: Dave
I got my order the other day. It included a lb each of the high priced lots
2 and lot 3 Esmeralda Geshas. Tom sends these in 1/2 lb vac-sealed bags to
maintain freshness. One of the 1/2 lbs of each them arrived with the
vac-seal broken. Any suggestions to re-seal them? Anybody in So Cal have a
FoodSaver (and want to meet)?
Now that I spent WAY too much on these coffees, I'm trying to figure out an
especially good reason to roast them, and who I know that might appreciate
the coffee.
Thanks!

Dave,
I would say that those half pounders with the vac seal broken are
telling you that they want to be roasted now! I would do a practice
roast of the other Gesha sent to you and then roast those that are
open. I am selfish. I only share these expensive coffees with my
wife.

I too had one of my Gesha bags with a leak in the seal... and I did re-
vac it with my food saver. If you're anywhere near Santa Barbara you
can certainly use my food saver.
I bought the food saver earlier this month when someone on the list
posted a question about how many different types of coffee we all had
in our stashes. I found I had 46 different coffees. I realized that it
would take a while to go though all that and thought it would be good
to vac seal them. I happened to have on of those ubiquitous 20% off
coupons for Bed Bath and Beyond and picked one up.

I don't vac' freeze all my greens but do primoes I plan to save longer. Just
started roasting a 227g CCR HT batch of Auction Lot 2 Gesha, not this year's
Esmeralda Lot 2 but last year's Mama Cata Gesha Auction Lot 2.
Unfortunately olfactory senses at maybe 50% at best so won't be able to
really enjoy the roast. (Fighting a sinus virus last few days.) Fortunately
it didn't hit me as hard as it hit Debi.

Thanks for the good wishes. Yeah, I figure if I haven't kicked this virus by
3 days vac' rest the Mama Cata Gesha'll go in the freezer. Same for the Zuma
Estate Kona I roasted after it. First (and only) cup of the morning was an
Esmeralda Lot 5 Americano that I could almost taste.
This aftternoon made up a couple dozen of those little pre-ground vac'
bagged to freezer for Debi to take to work for her press. Normally enjoy the
fragrance permeating the kitching. Barely a whiff noticable. Ok, so figured
go for something strong and intense to taste. (Had just finished making some
work bags of Ohana for Debi.) So cranked the grinder down and pulled a 19sec
gusher. Didn't smell sour like I figured it would, didn't smell hardly at
all of course! Took a sip and didn't even taste the sourness I just knew had
to be there. Dumped it, adjusted the grind, and pulled a beaut'. I could
almost taste it even.
Time to go see if I can taste some pizza for dinner...
