Definitely not vienna... I've been roasting a little over 11 minutes
and would know vienna if I saw it... I can't stand much past FC+; when
I do get it past Full City, I give it away to someone who likes that
stuff.
By smoke out my door, I meant about a whisp, maybe 2 inches long...
out in one little puff. Not rolling or anything. ;-)

Interesting, I think I have seen smoke from the door seal maybe once
like you describe it and that was well into 2nd.

Need an address, Walt? -Of course, there is a difference between a roast
that has attained FC in the roaster, then a wimpy cool down (WCD) is
initiated.
Depending on the bean and Tom's notes, I like to nurse the roast along once
1st Crack starts. A few snaps or more into 2nd Crack, and I Slam on the
Brakes to the roast.
Stopping the roast dead when 5 or 6 or 30 snaps of 2nd have occurred means
that the main body of the roast has not hit 2nd yet, and never will. I like
to listen, smell and watch the coffee beans when I roast because that's what
I'll be flash freezing and grinding shortly for the Steinway, not a
thermocouple or pyrometer.
Cheers, Mabuhay -RayO, aka Opa!
Got Grinder?
