First of all...
throw out the brown filters. They impart a cardboard taste and smell to
whatever you brew.
Second,
don't grind too fine. If the water does not drip at a good pace, grind a
bit lager next time. A whirly blade grinder will not work well for Chemex.
The coffee dust will clog the filter and overextract the brew.
Third,
add water (just off the boil) at first just enough to wet the grounds, let
it sit for maybe a minute and then pour almost to the rim. It's not that
important whether you pour fast or slow. I tend to dump it in and I think
it agitates the grinds a bit more than being careful and pouring slowly.
Fourth,
don't do more than two full pourings, the taste will not be as good. I
usually don't take it past the first button when I brew.
Fifth,
use a thermos for the coffee after it's finished.
I'm sure there may be more, but I can't think of anything else critical now
except for basic cleanliness and overall good coffee practices.
