Some call this Italian or Spanish roast, an insult to either!
At this stage, the coffee can be over 25% ash; it is carbonized, dead,
charcoal.

Brian,
This is exactly what I was talking about. Therefore 30 seconds into 2nd
crack would equal number 13 or even 14. This is why I brought up the
question? This along with the visual guide Tom has is what I use to
determine roast level.

Sorry for the confusion. In reviewing my roasting notes: first crack lasts
about 30 seconds to 1 minute and second crack starts 2 minutes to 2minutes
30 seconds after the start of first crack. Therefore, I see where I made my
error. City to me is as I mentioned at the end of first crack (this is 30
seconds to 1 minute after first crack starts), City+ is 1 minute to 1 minute
30 seconds after the start of first crack but first crack has already ended
for several seconds. Full City is 1 minute 45 seconds to about 2 minutes 15
seconds after first crack starts (this is to get as close to 2nd crack
without entering it at all). I also confirm by visually comparing my beans
to Tom's pictures to make sure I made it far enough to reach FC and not
still be at City+. Full City+ is when I hear the first one or two pops of
2nd crack (these are usually outliers and during cooling I sometimes hear a
few more pops of 2nd crack) and Vienna is when I hear about a half dozen
pops of 2nd crack (the cooling cycle gives me a few more pops of second
crack).
