1) flush until heater comes on =
2) build PF
3) heater should be off and boiler at or near it's highest (over) temp, now
flush "listening" to the steam hiss at the group, as it subsides count one
one thousand two one thousand three one thousand, flip on the steam switch,
lock and pull.
This method goes through water but is consistently repeatable shot after
shot. If doing back to back shots post shot group flush will likely already
have heater engaged so go directly to step 2. There are two other "surf"
methods more often talked about that require lengthy counts from the time
the heater goes off waiting for boiler to cool OR count from the time the
heater first comes on waiting to heat. (flush and wait up count or down
count) But I find flush and go from end of steam hiss count easier and
especially much more repeatable across different machines and hence easier
If shot too hot/bitter count longer from steam hiss subsiding, if not hot
enough/sour shorten count.
This is also assuming shot pulled ~25sec 2 to 2.5oz, ideal depending on the
bean/blend/dose. A too fast pull will also go sour even at proper shot temp
and volume, but if pulling too fast too much volume and hence over extracted
will bo bitter.
