Honestly, John, I like it all days. I've been roasting it on Fridays and
pulling shots Sat-Wed (by the time I run out). The earlier days (1-3) the
darker roast (FC++) is crazy chocolate. Like, Mayor Choco McCocopants of
Bittersweet Town. The fruitedness develops a bit slower, so it begins to
hit 3-5 days. I'd say day 2-3 are my favorite. I know that's a short
rest! I haven't gotten a batch to last beyond about 5 days, so I don't know
what a longer rest brings. I need to roast up extra and stash some in the
back of the cupboard for a week and see what it brings.
