Last Sunday, the Ethiopia Organic DP - Dale Yirga Alem was roasted in
the RK Drum to a solid Full City roast - NO 2nd crack. It was brewed
(Technivorm & Swissgold) for the first time Thursday morning and again
this morning. The description that Tom wrote for this roast level is
dead on, "It was at Full City that they [fruit] came into their own,
along with fresh ginger spice, some macadamia nut roast tone, and a
finish of bittersweet chocolate and cola notes."
There is a lot of body to the cup and some buttery oiliness that lends
to the macadamia nut and promotes the sensation of a milky chocolate.
Most intriguingly, from the very first sip on Thursday and since,
there is a tickle in the aroma and a finish to the coffee that, in a
very subtle way, evokes memories of the finer Yemeni coffees in the
class of the Yemen Mokha Sharasi (previous lot) if I remember
correctly - it's not wild or overpowering, just a hint. Roasted
darker, in accord with Tom's notes, I think this coffee would make for
that great "chocolate bomb" espresso.
This exquisite elixir is going to go well with the wonderfully
beautiful day outside!
