Right, and there were a lot of good aromas and flavors that would have been=
 sacrificed if it had been roasted darker. Maybe I'm sensitive to the a=
cidic flavor or maybe I've just not taken the trouble to get acclimated to =
it. Next time I buy greens I will get some, if it is available, and try it =
at a variety of roasts, as well as a blended light and dark roast.

The roast on the Blue Quetzal was fairly light, but we wanted to play =
to it's strong suit, bright fruited acidity...
