Topic: dark roasts, and chicory (3 msgs / 96 lines)

I've been experimenting with darker roasts recently. Someone posted a
while back about newbies developing a fear of 2nd crack, and I
realized that I've been suffering from that somewhat, so I thought I'd
work through the phobia. My last order included some French Roast
Blend. I roasted some well into 2nd crack, and I must admit I was
pleasantly surprised at how much flavor that blend is able to retain
at that roast level. On a whim I also included some chicory with that
order, but I'm not too impressed. I tried mixing some with the FR
blend at two parts coffee to one part chicory, and the resulting
concoction was hard to choke down. I felt that it ruined an otherwise
excellent cup. On the other hand, I did have some good results mixing
it at a 5-to-1 coffee-to-chicory ratio, to "save" some over-roasted
Guatemala Huehuetenango. (I had accidentally Vienna-roasted it, and
while it wasn't ruined, it tasted a bit like *$.) I felt that the
chicory adjunct actually improved it somewhat.

In the past when in the mood for 'Nawlin's style presspot agree 3:1 chickory
was too much. It's been a few years since I've gone there but IIRC 5 to 1
was the ratio I settled on too, the chickory then doesn't totally over power
the coffee. Though might have been 4 to 1, really been quite a while, but
distinctly remember 3:1 was way too much for my tastes.

I have a friend who claims to love chicory, so I got some from SM for her and roasted up some FR Sumatra.  She knows that she's not allowed to even touch the beans for two days after I roast it for her, but she couldn't wait on the chicory.  She ended up french pressing a batch of just chicory!  Yes, she did say it was terrible :-)
