Topic: OT: Pancakes neat and easy with the emphasis on neat (26 lines)
1) From: Jim Gundlach
For about 25 years now I have regularly made pancakes for weekend
breakfasts for the kids and now the grandkids. One constant complaint
has been the mess I make so over the past decade or so I have worked
to make decent pancakes with the minimum of mess. Here is how I do
it. I use a dry pancake mix made of half Arrowhead multigrain pancake
and waffle mix and half unbleached white flour with 1/4 t baking soda
and 1/4 t salt added for each cup of flour. To make four good sized
pancakes I melt one tablespoon of butter in a four cup Pyrex measuring
cup, beat one egg into the melted butter with a full sized fork, add
buttermilk to make a total of 1-1/3 cups of liquid in the measuring
cup. I then add one cup of the dry pancake mix and stir with the fork
till barely blended. I then pour the batter onto heated griddle to
cook. When through, I only have to wash the one fork and the Pyrex
measuring cup to clean up from the preparation part of the pancake
breakfast. I leave a plastic measuring cup in the pancake mix
canister so it does not have to be washed after each use.
