Thanks, Jim! I live alone, so this recipe is great for me. I don't
usually have buttermilk around, or any real milk, just soy milk, but I
found an easy recipe for substitute soy buttermilk, so I should be in
business.

Hah!  What sort of complaints would you get if you didn't make pancakes? 
You know, in the interest of keeping the mess under control?
I make a colossal mess when I make pancakes.  I separate the eggs, beat the 
egg whites and then fold them into the rest of the ingredients.  But, it's 
worth it!  It's Mom's old recipe from when I was a kid.  Cooked in her big 
cast iron skillet, they bring back memories.  Yep, it's worth the mess.

I used to incorporate the fat into the batter as you all are doing. Try
leaving it out and only grease the pan enough to keep them from sticking. We
like the results better that way. (If you put the butter ON the pancakes you
get to taste it more).

Carol, if you take that a step further and substitute the lemon juice for
citric acid, you wind up with pancakes that taste like plain cheesecake.  I
use a little under a teaspoon for a 1.5C milk.  If you do this you'll have
to add more milk to the batter as you're mixing it up to get the right
consistency.  It's fun to watch people eat them because nobody's expecting
cheesecake.  They're really good.

O.K. - seeing the words *pancakes that taste like cheesecake* caught my eye.
(Hey - any sentence that has the word *cheesecake* would catch my eye!)
I looked at all the previous message - Derek, did you mean substitute citric
acid (vit. C, right?) for the lemon juice in Carol's buttermilk substitute
recipe she posted (below)?
I need to get this right, although pancakes are something I usually throw
together.
(and, btw - Carol - the font comes through normal for me. No problem
(although I could use some larger font myself, these days) Hope you're
seeing better - and will see better - as you heal.)

Lynne: Yup, that's what I do.
All I use is the Joy of Cooking's recipe for buttermilk pancakes, but
instead of using the lemon juice/milk substitution, I use citric acid.  I
usually add vanilla as well.
Try it and let me know what you think.

Citric acid is NOT vitamin C.    Vitamin C is ascorbic acid.   They
are different molecules.
