Topic: "Crema" and Dry roasted vs Pulp Natural Brazil (6 msgs / 148 lines)
1) From: Rbt Tut
Cheers
for a very long time I roasted w an cafeRoasto and now am using the iRoast 2
my favorite is the SW classic espresso. I do enjoy trying to Make My Own
Espresso. I use Dry roasted Brazil for the crema about 40 to 50% then add
others to see how I do.
Currently SW sells a Dry Processed Fundo Peaberry w the proviso that you use
it up with in 4 months as it degraded is some fashion.
they also have a pulp natural precessed Pocos de Cladas.
I like to get my Greens at the least shipping charge as I live in NE and
then keep it for as long as possible in the SW cloth bags.
so to get to the question:
how does the crema from pulp natural processed compare to dry roasted?
Ive got a lot of green coffee from SW. I don't need to by now.
maybe tomorrow a New Brazil dry roasted will show up and solve my problems.
my problem is actually i plan to get the digital thermometer for the iRoast
ASAP but would like to add new green coffee at the same time
thanks

A customer of mine thoroughly enjoys the Sweet Maria's Classic Italian
Espresso Blend as well; it's good stuff.
I believe Tom's admonition about the 4-month supply of the Dry
Processed Brazil FTO Poço Fundo Peaberry has to do with the fact that
the fruited notes may fade significantly beyond that point given
various environmental variables combined with the manner in which the
coffee was processed. If you are roasting dark enough that the
fruited notes aren't showing up in the cup anyway, then the 4-month
time limit may not be of concern to you and the Brazil FTO Poço Fundo
Peaberry may suit you just fine.
According to the Coffee Production Timetable though, we have started
into the best part of the year for shipping Brazils.http://www.sweetmarias.com/coffee.prod.timetable.shtmlQuite the quandary, but every time I hesitate I miss out buying coffee
I really wanted or needed.
Be it a Pulped Natural or Dry Processed coffee, both should yield
great crema ... depending on your barista skills. :-)
I am not sure this was helpful, so Happy Thanksgiving!
