The motor will shut down if you stall it,  so if you had it running
when the burrs touched, you might have stalled the motor, causing a
shutdown.  Other than somehow providing more resistance than coffee
beans would offer, it shouldn't shut down.
As far as uniformity,  you won't get complete uniformity of the
particles,  but the amount of fines should be low (no grinder
completely eliminates fines).  If you had just ground for espresso,
it may take a few grams to blow the fine grinds from the previous
espresso grind out.  I can tell the difference in the amount of fines
between my Macap and lesser grinders by the amount of back pressure I
get from a similar sized grind when I use the aeropress.
