I find a tiny bit of sugar (less than an demitasse-spoonful) rounds
out the flavor of a good espresso. Can't say the same for brewed
coffee, but that's just me--and for the longest time I stubbornly took
even my espresso completely unadorned. Some "supertasters" like a
friend of mine have so many bitter receptors on their tongues that
they cannot take straight black coffee (my friend likes to say she
prefers her coffee to taste like "hot coffee ice cream").
A double pulled into a tiny dollop of honey and a crushed cardamom pod
make an Espresso Allegro (Dave Olson's signature drink at his Seattle
U. Dist. shop back in the day), which is yummy even if you usually
drink plain straight ristretti.
