Topic: How's my Mokha Mattari look for evenness? (6 msgs / 154 lines)

http://i10.photobucket.com/albums/a139/nomo4me/IMG_1537.jpgAbove is a pic of a roast I did in the Hottop B, 8 oz, completed in
about 17 minutes. Taken about 10 seconds into 2C. 2 minute pause
between 1C and 2C.
My "profile" was 7 of 10 bars on the heat display for the first 5
minutes, then 10 of 10 bars until onset of 1C, then 4 of 10 bars and
fan run at 50% until ejection.
Some of the lighter beans shown have a silvery-bronze skin on them but
are darker inside. Some of the tan colored beans are really that
light inside as well.
I know the DP coffees can be a bit inconsistent but would like to hear
from others if the roast pictured is acceptable for the bean or if I
should be tweaking something for a better cup.
Thanks
Mike

Mike,
I'm not very experienced - only been roasting 6 months and the last 6 weeks
with a Behmor. That said, I roasted this bean recently and stopped it right
about the same spot (heard some 2C cracks in the early cooling cycle), but
my beans were a lot darker! It's my experience that DP beans this light have
a "sour" character. Could be the photo color doesn't come through or could
be I just don't know what I'm talking about ;-(

I ment to also ask how the beans taste. I guess that's the important thing.
Interesting that we all appear to taste differently or have different
preferences!

The roasted beans look quite inviting to me. I'm guessing the picture was
taken right after the roast as I find with rest, the color evens our a bit
and darkens. My opinion is that trying to even the roast color any more
would also diminish the flavors that make the coffee appealing.

Mike, I use the original model Hottop. This lot of Mokha Mattari has one of
the widest color ranges that I have experienced. I was roasting 9oz to
20sec or so into 2nd crack where it hits a rolling crack as it's entering
the cooling tray. The really light beans look to be floaters if they were
wet processed. I have usually been culling out about a dozen of the
lightest or so. The color is still inconsistent but it has been working
well in my blend with Sumatra Lake Toba 19+ Extra Bold and Java Kajumas
Curah Tatal. You really have to go by time, sound and smell with the
Mattari rather than color. I can't help you with the taste on this one
since I've only used it in the blend. I've found that I seem to be able to
please the most people with presents of this Sumatra, mocha-java blend.
HAPPY NEW YEAR,
Elliott

To me, that looks quite good, and you can't expect too much more from
Yemeni coffees. I see just a couple I would pull out. Was there any
culling involved before you took the picture?
Tom
