Topic: No More Classic Italian Espresso Blend? (8 msgs / 157 lines)
1) From: Gordon
Whoa--I just noticed that this blend is no longer listed as
available. When did that happen? Is this a permanent change? I
sincerely hope it will be for sale again soon! I really like that
blend with my morning cappa and it is very nice as a straight shot
too.

They ran out during the push right before Christmas.I'm sure it will be back
after the holiday dust settles and Tom can blend up another batch. As long
as he has the right beans.
Cheers,

If one of the components of a blend becomes depleted in SM's stock, so goes
the blend.
This morning, I got to admire Ray's Desperation Blend #2, 0.6 Ethiopian
Harar Horse Green Stripe, 0.3 Sumatra Classic Mandheling both 1 week post
roasted and 10% etc- the tailings of jar # 1, #2 and #3. 1 - 2 week post
roast Costa Rica, Brazil...
The Moka pot just made Liquid Gold and a couple of Americanos out of the
rest of RDB #2. None of this was in any book- there's no risk of the sick
bird syndrome if you experiment on your own. Rules are just the summation of
others' experiences- the more you try to follow the rules, the more you risk
failure if you're just trying to follow a recipe somebody else developed.

I do hope you're right that it will be offered again soon. I have
only a couple of pounds left. But maybe, instead of viewing this
blend's absence as a calamity, I should think of it as an opportunity
to try the new Espresso Workshop blend (if I can get an order in
before it's gone).

I'm not sure if you saw this post Gordon. If he stops offering it, we might
get his to know his secret blend. See below.

I recently received an email from Maria concerning my similar request about
Liquid Amber blend. She said that Tom did intend to publish his recipes for
discontinued blends. If he has made a final decision not to offer these
blends in the future, then I'd expect to see the secret formulas pretty
soon.

Thanks. Yes, it will be interesting to see the components, but I'm
sorry Sweet Marias will no longer offer the blend. Wonder why it's
being dropped...low demand?
Fortunately, though, other SM blends are still available. And, as
long as Tom continues to do the work for me, I'm not particularly
interested in creating my own blends.
Happy roasting in the New Year!

7) From: Joseph Robertson
I suspect it is being dropped because Tom is having trouble getting
one or more of the beans that go into the blend. Each season also
brings changes to each and every crop. Many factors go into
maintaining a particular espresso blend or any blend.

I don't know but suspect it may simply have more to do with Tom moving more
into more modern espresso blends versus the Old World (old school) Classic
Italian blend. Nothing wrong with it, just not as dynamic a blend taste wise
as often found these days.
