I just got the latest pairing of roasted coffees yesterday, the Indonesia Flores and the Ethiopian DP Bonko. Both of them roasted at City to City+, pretty light, actually, to bring out the fruit. Very educational (for me, at least), but they're way too extravagantly fruited to make me want to drink them as is. You can definitely make out the characteristics that Tom's trying to demonstrate, though. 
At any rate, I also had on hand the Brasilian Ipanema "Tree Dry-Process." Looking for a chocolate antidote to all that light roasted fruitiness, I picked this out for the promise of chocolate and for the recommendation that it be roasted FC to FC+ to Vienna. Just the ticket, I thought. 
Roasted the Ipanema to FC+, and then blended with the Bonko at 50/50. 
Wow! Chocolate cherry bomb in the Chemex! A bit more rustic in the French Press. I could make a regular habit of this blend.
