However, if you cook enough of the alcohol out of the Ripple to  
prevent inhibiting freezing, it would make a pretty decent ice cream  
flavoring if you put it INTO the ice cream or reduce it to a syrup and  
pour it over. (Boone's Farm Apple might also work well).
I have it on good authority that floating a spoon-sized dollop of  
vanilla ice cream atop a small cordial glass of inexpensive nonvintage  
domestic or Aussie port or cream sherry works too. (And slightly melty  
vanilla ice cream is a nice variation on a topping for Irish coffee-- 
Northern Irish, perhaps?).
