Bah, I've pulled 90% crema shots with excellent taste of coffee vac'd and
frozen over a year.
Some heavy hitters in the industry like Michael Sivetz for many years have
been proponents of freezing roasted coffee to preserve freshness.
Here's a fairly recent study specifically dealing with freezing coffee for
espresso extraction, a very demanding method of extraction:http://www.home-barista.com/store-coffee-in-freezer.htmlTake a roast vac and freeze it at it's rest peak, say 7 days. Months later
compare it to the same coffee roasted and rested to the same rest peak.
(Ideally the greens will have been vac'd and frozen during those unsuing
months to preverve their freshness prior to roasting.) Now pull shots of
each and blind taste test. Now tell me if freezing roasted coffee destroys
it or if it preserves it. 
Idle speculation is mute and worthless. Personally I'd estimate AT WORST
properly freezing roasts loose AT maybe 5 to 10% over non frozen peak taste.
What's a real myth is any method of long term room temperature storage
preserves freshness beyond a few weeks. Months? But it's in a multi-layered
valve bag, nitrogen flushed and vacuumed. Fogetaboutit. Vac'd and/or valved
or not it's gonna die in the cup. Taste tests say so. Hey think about it. If
it stays hard vac'd that means the coffee ain't got no life left to degass!
