The Ipanema is one of my favorites as well. Last week's roast included a Colombian, I believe organic Narino, which roasted quite uneven. After a very pronounced first crack and solidly engaging second crack, I dumped the roast and viewed quite a few whitish beans - mottled white and light brown. I started to pick them out when I realized that they were a significant portion of the roast. I decided I would let just them rest and see were it went. The beans never really darkened during the rest and I was expecting under-roasted flavors in the brew. I was certainly surprised to get very pleasant mellow malted chocolate milk flavors and very smooth after tastes. It's my favorite of the week from the press.
