Topic: Protocol for comparison of Mazzer Mini to Cimbali Max (94 lines)

The Cimbali Max Hybred will not be delivered until 2/25. So like a kid in a
candy store I have been spending my time working out a protocol for
comparison. This is also helping to keep my mind off my impending surgery
tomorrow. At any rate here is what I plan to do. Does anyone have any
suggestions for improvement to the protocol.That is, short of flying one of
you out here to Hawaii to be a second taster.

HYBRID
Grinding Speed and Delivery
1.       Both machines chutes and dosers are vacuumed out clean.
2.       An equal weight of the same  roasted bean is introduced into each
machine (Monkey)
3.       Each grind time is measured
4.       The grinds are weighed. Results reported in percentage (t test is
overkill)
5.       Grinds are inspected for volume
6.       Hoppers of both machines are visually inspected for residual
grinds.
Shot Pull
1.       Steps 1 and 2 are repeated
2.       One and one half oz. shots of espresso will be pulled from each
machine
3.       Each shot will be visually inspected for color and crema
4.       Each shot will tasted
Order Effect
1.       To control for possible order effect Shot pull will be repeated
2.       However, the shot pulled from the first machine will now be the
second shot pulled.
3.       Steps 3 and 4 of shot pull will be repeated
Blind Test
1         Shot glasses will be coded as to which grinder was used in the
shot's preparation.
2         Shot pull will be repeated
3         Taster will leave the room and another individual will randomize
the 2 samples ( move them or not)
Blind Test Order Effect
1.        To control for possible order effect Shot pull will be repeated
2.       However, the shot pulled from the first machine will now be the
second shot pulled.
3.       Blind Test will be repeated
Microscopic Analysis of Grinds
1.       Both machines chutes and dosers are vacuumed out clean.
2.       A n equal weight of the same  roasted bean is introduced into each
machine (Monkey)
3.       Both grinders will grind the beans with the grinder set at drip
grind and espresso grind
4.       After each grind the machines and dosers will be vacuumed clean
5.       This procedure will result in 4 discrete samples
6.       Each sample will be collected in a polyethylene bag and numbered 1
through 4
7.       A sealed envelope will be included with the samples identifying
each sample
8.       The samples and key will be mailed to Just Plain Mike for analysis.
