Till you look close, then you wonder why they didn't finish the 
machining. Mine look like they were cut with a roughing cutter, 
hardened and shipped. Essentially no finish grinding on the inner burr.

Actually, in your images, the burrs look excellent. Where the burrs (the
outer burr is shown inverted) don't touch the coffee beans, they don't need
to look pretty.
The score marks that you see are actually on the rear faces of the burrs.
They exert no force on the beans. The beans are sheared or cut at the knife
edge on the top edge of the burrs. You are looking at the coarse primary
teeth of the burrs. The knife edges on those teeth look very clean, like
they have been finish cut and won't scratch the beans like the Maestro outer
burrs all do.
The coffee grind size is ultimately determined by the space between the
triangular faces on the ends of the fine burr teeth on the inner and
(inverted as shown) outer burr. Look at the fine-pitch secondary shearing
teeth on both the inner and outer burrs. Very clean cut on the knife edges.
The secondary machining operations on these burrs have made them into
excellent coffee bean cutters. And a tad expensive...
If you have several $Big and a very few cents burning a hole in your pocket,
and an extra set of burrs that you won't need for upwards of several weeks,
go ahead and submit your drawings and the set of burrs for bids and a
guarantee to a few metal fabricators. The first question they will ask is:
"WhyTFO?" then,
"You Want WHAT Heat treatment?"
"You Want it WHEN?"
