Mark, are you controlling the heater and fan in tandem via variac or have
you split out the fan so it's at least constant? If the former using the
variac that way actually tends to work against itself. Lowering the voltage
reduces heat but simultaneously reduces air flow which increases heat and
vice versa. Some benefit but not nearly as much as just having the fan
constant and controlling the heater, a big improvement in control. Having
dual independent variable control is ideal air roasting, or about any
roasting platform for that matter.
