Topic: molasses? (28 lines)

Yup. The cup of coffee I'm drinking right now tastes just like my
grandmother's old molasses cookies, a lifetime family favorite. The only
thing that's missing is that hint of mildened ginger (made mild that way in
the old days by starting out as powdered ginger and then sitting for years
on the spice rack! :-)).
But wow. It's the Colombia Dos Payasos de Tolima, roasted to C+ and rested
for 9 days (!).
The first I started reading all these reverent "rested for 72 hours," and
"rested for 7 days," and, finally, "rested for 14 days," I was immediately
suspicious. Like, is there really such art in the resting, or are we just
making this stuff up?
Score one for the art side, although I won't even start to pretend what
happened. All I know is that I'm drinking one really nice cup of coffee
right now, from a batch that didn't taste that remarkable even once in the
whole previous week.
