I seem to be getting a lot of shells in my roasts yet it's listed as a
.6 defect lot. Anyone else experiencing this?

I seem to get more chaff than other beans, but I just sift it out when I use a fan to cool the beans.  Is there a problem with more chaff, is this what you mean by shells?

I'm not sure what RayO meant by shells but from my experience shells
are a defect, looks like a hollow bean in the cooling tray.

Yes Shells are a secondary defect that show up post roast and look
like half a sea shell. Up to 25 are allowed in 300gr. specialty
coffee. I had a busy roasting day with the first batch I did and just
bagged them without checking and an espresso drinker returned it.
Since then I've been culling them before bagging.

Ed,
Thank you for the refresher on the specs. Very important when dealing
with certified specialty coffee. I believe all of Toms coffees fit
this classification. For this I send folks to Tom and Maria and always
will.
