A princely Ethiopian MD in my neighborhood occasionally entertains
friends to an "Ethiopian coffee ceremony" in which the resting period
is about 5 minutes.  Everybody praises the result, and our host says
the idea of waiting a day or three is a puzzlement.  The listers'
concensus is impressive and so is Ethiopian tradition.  Fortunately,
when I'm not with the rest I love, I love the rest I'm with.

I too have been intrigued by the Ethiopian coffee ceremony which I saw
at last years SCAA. Their ancient ritual serves up coffee while the
roasted beans are still warm.
