I enjoy my mental picture of Jim roasting on a wood stove, in a wok
("should be heavy, the thickness of a nickel") that settles into a
round hole in the top of the stove, with pecan wood burning in the
stove, and heat supplemented with a heat gun. If I recall correctly,
in his kitchen, with a blanket hung in the doorway between the kitchen
and the rest of the house to contain the roast smoke.
I hope I recall all this correctly, because I really love this mental
picture.... In fact, if it IS wrong, I'm still not changing the
picture....

Yep, I have been through all those things, however, we will be working  
with the new Behmor home coffee roaster that arrived yesterday for all  
our inside roasting in the future.  I have too great a love for a  
variety of outside techniques to keep from doing some of the old ways  
but learning the new system is the emphasis for a while anyway.  You  
recall some of the history of my roasting, but I am learning the new  
ways right now.
