Topic: Beans & roasting levels (6 msgs / 146 lines)

I need some help concerning the traditional roasting levels. I understand
that different beans may produce wildly different results at the same
roaster settings (maybe understand is too strong a word, more like I've come
to accept the fact). Can a relative comparison be used accurately that
roughly links: First Crack, Post First Crack, Pre-Second Crack, Second Crack
to the CITY scale? I've been on the SM list serve about two weeks and the
amount of information is incredible (must admit a good bit is over my head
at present). I'm guessing that if I get a better understanding of others'
roasting experience I'll be able to improve my own as well as duplicate good
results (when they happen).
I'm using a Hot Top (pre-digital) and a Behmor 1600. I just downloaded the
BehmorThing software.

Tom explains this really well in the Pictorial Guide to the Roast Processhttp://www.sweetmarias.com/roasting-VisualGuideV2.phpI printed that out and keep it nearby while roasting, especially the section
between City and Vienna.
I'll summarize what's in my mind, I hope it's correct.  If not, I'm sure
someone else will jump in.  There is much more to each definition, like
color and smell and time and temperature, but I hope it's a good start and
answers your question.
First Crack Ends = City
Between First and not yet even thinking about Second = City +
The time before Second Crack - when it's imminent but not yet cracking =
Full City
10 seconds or less of Second Crack = Full City +
More than 10 seconds of Second, but Second has not ended = Vienna

I use the pictorial guide at SM's for it's verbal descriptions when I'm roasting.  Step number 9 on the guide describes the end of first crack as City roast and the following steps describe the other roast levels.http://sweetmarias.com/roasting-VisualGuideV2.phpEd

you have (the HotTop, to be specific).
I'll leave the alignment of roast levels to others, as I'm pretty sure I'd
put my foot in it, and there are others here who can state them with more
authority.

I use the same degree of roast chart everyone else is talking about (there's
a link to this in BehmorThing under Help) but I added some annotations to
the chart and made it my background for roasting reference.
