This might work for small batches, but be warned: if you use a vacuum
to cool a large batch of beans, you will very likely melt the innards
of the plastic fan blades/impeller of the vacuum.
I'm considering building a better cooler for my roasts; I currently
roast in a round fry basket; I was thinking of building a box with a
fan pulling air through the beans, and a hole for the basket to drop
into. My only concern, since I roast outside, is drawing bugs into
the coffee; may have to add a screen mesh over top during the cooling
phase :)

Personally, when I do a HG/BM roast instead of the Behmor, I dump the
beans into a mesh colander which I then place on top of a box fan which
is blowing UP. so the cool air is blown up and through the basket of
beans. Works nicely for me.

My response to such a concern would be to look for bugs, if none
showed up I would not bother doing anything else.

As a side note, the bugs in our backyard have gotten pretty bad, and
I tend to roast in the evening/nighttime, with a light on nearby....

The Wife found a rechargeable bug zapper at the thrift store that we've been
taking camping. Can't swear how well it works, but we take it inside the
tent trailer and turn it on while we sleep to attract any flying insects
that have decided to spend the night with us.
Aren't mosquitoes attracted to CO2 as a rule as well? The roasting
byproducts may draw them in.
Time for a screen porch or roast inside one of those screen houses used for
camping.

I have been cooling my beans by putting a couple cookie banking sheets
on the concrete next to each other, poring the beans in, shake it a
bit to get a single layer of beans and then setting up a house fan to
blow across them. Works great.

Allon, Thanks! I hadn't thought that through. I'll figure out a better way
to cool the beans.
