Topic: Rancillio, a question of tampers.... (14 msgs / 365 lines)
1) From: Mark Osborne
A question about Ms Silvia's portafilters.
I only use a double basket. I have a 58mm tamper from (gasp) another
supplier.(ok, so it was before I was homeroasting and knew better...)
If I dose at 14-15g, the tamper will get stuck in the top of the PF,
as if it's slightly too large.
Is this a tamper size issue, or operator error?
I was updosing to get a good tamp, but the results are inconsistant,
annoying and unnecessary.
current roasts on hand are IMV and SM French Roast blend. roasting
Blur Krishna tomorrow, and I too, LOVE my Behmor...

ahh the quest for the proper size tamper. My espresso machine came by way =
of a "tradition" so to speak, so it came without a tamper or an owner's man=
ual. Couldn't find one online either to suggest a tamper size. I bought o=
ne that was a 48mm and was WAY too small. So i recently bought a 52mm and =
it's not a snug fit so will probably end up trying out a 53mm before too lo=
ng.
It sounds like your saying that it only gets stuck with larger does volumes=
? It's hard to say without seeing you do it, but are you "knocking" the si=
de, after the first tamp, to make sure grounds on the side of the wall fall=
 into the middle?

I never had that problem, but I did notice Les' Thor Hammer in 58mm
gave me a little more wiggle room than a metal tamper in a Silvia
basket. If your baskets are completely straight-sided rather than
slightly wider on top and you prefer to use a metal base, you might
want to try a 57mm with a very slight curve. (Silvia likes to be
updosed, about 15-16g., as opposed to my LaCora/Andreja and my old
Pasquini, which work better with a little more "headroom").

At higher volumes, we're talking 50 second shots, leakage out of the
pf and funky taste.
The SJ has new burrs about 3 months ago, and I have been varying grind
both finer and coarser from center trying to get my mojo back.
Silvia was back flushed about a month ago. I reduced the dosage to try
to get shots pulled before I nodded off...
I feel like I'm chasing my tail. Only equipment change is roasting in
a Behmor, and I really don't see that as an issue.....

It's starting to sound like you were onto the problem in your first post. It
does seem to be the tamper. I suggest you contact Les. He is the local
expert on tampers

Schomer has recommended that you tamp down to 5mm below rim of basket. Try
your tamper at that level with an empty basket. It's a little over 3/16th
inch into the basket.
Roast is not the problem. Les is your best bet.

Thanks Ray-O. It would have been a long time for me to go to that

mike,
I found the same with EW#4. A bit tighter grind really helped. Which
reminds me, I need to order more.
The whole tamp issue has become an enigma to me. If I dose by weight,
the tamp gets stuck in the PF basket. If I fill, tap, level and tamp,
I get better results. Opening up the grinder was a big help with the
SMFR I am using now. I will fiddle with the IMV tomorrow. Seems like
this all went off the rails when I switched from the Modified Poppery
II to the Behmor. Much slower roast times...
I suffer under a delusion of competence....
