Bitter usually an indication of over extraction and or too high brew temp.
I'd suggest pre-heating the dripper by pouring off boil water through it
just before brewing rather than nuking during brewing. KISS. FWIW get raves
at the café using Beehouse pourovers, we always pre-heat the dripper befo=
re
adding the ground coffee and pouring.
