Department of Health = NOT funny. They be costing me ~$2k ($1k in their fees
and $1k grease trap) before I can open the doors at my Roastery location
coffeehouse...
Get this, a "coffee cart" is required to have a signed letter for use of
someone's map sink to dispose of their grey water. A coffee house with the
exact same menu offerings is required to have a grease trap. Nope, mop sinks
at a coffee house where a coffee cart could dispose of their water are not
required to have grease traps. Coffee house has to have dishwashing water
and beverage/extra steamed milk dump sink go through grease trap. It would
have been MANY thousands cheaper if I'd just bought and rolled a coffee cart
into my Roastery! Stupid bureaucracies...

Here is the real pisser, I'm not that far from you, just different county.
No grease trap required here. Just floor sink with gap for dish washing and
main sink. Scoundrels, out for more fees.
