I recall when Stumptown started supplying beans and set ups to Eugene 
Oregon.  At first I was thrilled.  Then, unfortunately, I was 
saddened.  It simply was not what I recalled.  All the meticulous 
training, quality, upper high end tier was not there.  I was not bag, 
but it was not stunning either.  It all clicked into place when I 
heard about the 'intensive' training that was done where they devoted 
and ENTIRE DAY to training the 'baristas'.  The first clue watching 
them 'build' a shot was the automatic doser and tamper (in grinder) 
to assure uniformity and consistency.  Need I say much more?  I will 
go there for a shot now if I need one, but don't search it out any 
more.  After that, even visiting the roastery and shop in Portland I 
have to say it's just ok now.  Better than many, but not the star I recall.

After dropping my daughter off at Barnard, I was the victim of a coffee
crime on the upper west side.  An untrained barista was the criminal; he
filled the portafilter and then, without tamping, installed it in the
automatic espresso machine & pushed the button. The shiny tamper sat unused
to his right.  I wanted to give him some training but my wife thought I
would make a scene.   My inner voice said in a caricature of a street vendor
hawking hot-dogs, "Got your tamper right here, buddy" with an
(in)appropriate gesture.  
Oh well, it really wasn't his fault; he hadn't been trained.
(sigh).
