The vacuum jar sealer was the rage of late night "infomercials" forever, and
I do admit to owning one back in my freezing/canning days. Instead of using
heat to create the vacuum inside the jar (as in water bath canning and
pressure canning) you literally use your vacuum cleaner hose and the jar
adapter kit to create that vacuum seal. It works extremely well for things
that do not produce a gas- fermenting sauerkraut comes to mind. (That was a
messy explosion!). However, if you allow your roasted beans to rest for
awhile prior to using it will provide a good seal for quite some time. We
use glass quart size jars to store roasted beans in- but the greens are
double bagged in zip lock plastic bags and kept at room temps and in the
dark. We just don't seem to keep green coffee long enough for year long
storage experiments.

I use the quart Mason jars to store roasted beans. The beans evolve CO2 for
several days after roasting, and the dense gas displaces Oxygen molecules
from the coffee beans. Treat the CO2 gas like low-viscosity water. Don't
just pour the beans out of the jar- dip out the ones you want and leave the
others submerged.
If you evacuate the jar, fresh air and Oxygen will migrate back into the
bean structure every time you re-open it, especially if you pull a vacuum
each time...
