found looking for the one I have cooked.  One uses black pepper rather 
than chili but there is no reason some ground red chili could not be

Paul Prudhomme cookbook, Fiery Foods That I Love.  This is not Cajun 
cooking but other things that he has created using many different 
chilies and other spices from around the world.  The name of the dish is 
Coffee Nut Chicken.  It is a riff on a Mexican mole with guajillo and 
ancho chili powders (both mild but very flavorful), roasted pumpkin and 
sesame seeds along with roasted pecans and Poppy seeds.
Basically you brown the chicken and pan fry it for a few minutes, then 
set it aside.  You brown / toast the seeds and nuts in a dry skillet, 
grind them up into a fine powder / almost paste, mix this with some 
chicken stock, the ground chili powders, the other spices, the coffee, 
etc. and pour that over the chicken to finish its cooking. 
I think the book is out of print and would be very hard to find.  I've 
scanned the recipe and converted it to a pdf file for anyone who wants 
it.  Email me if you want it.   I'll send a reply to all in one email 
with notes on my modifications (I didn't include the poppy seeds, didn't 
use basil, and used brewed coffee rather than instant are the main ones) 
some time Monday (giving the list time to process weekend email)
