Topic: IMV '07 Crop vacuum packed and frozen (4 msgs / 70 lines)
1) From: sci
Yesterday I roasted a batch of IMV from the 07 crop. It had been vacuum
packed and kept frozen in a non-defrosting freezer.
The flavors today were quite good, but just a tint of blueberry. IIRC, IMV
hits its peak about 3 days out, so I'll be drinking one cup a day till this
batch runs out. However, it is so hard to say if it degraded much since
there's no possible way to compare it to a control batch. This is the
oldest batch I have ever roasted, and I kept it this long for just this
purpose: to see if vacuum packing and freezing will adequately preserve a
bean for two years.

I have some 2007 IMV in the stash - zip-top bag, house stays at about
75f year round. I took the last batch to the first hint of second
crack, let it rest four days and the blueberry nearly knocked my socks off.

I still have a pound of that, as well as the Meno MV. Good stuff. But I
roasted my last pound of Guat. Oriente. Yum.
The oldest coffee I've roasted was two years old. I kept it in my
cabinet, in the burlap bag. It still tasted great, and was sad it ran
out. It was the Guat. Maravilla from a few years ago, 05 or 06. Had a
20# bag is why it took me two years to use it all.
Noticed that one is back in, but unfortunately with a different flavor
profile this time, missing the dutch cocoa I like. Less was right back
then when he said if you find one you really like, buy all you can
because there's no telling if or when you'll get another one like it.
And to date I've yet to run across another coffee with that dutch cocoa
flavor, going on four or five years now. But I keep looking.

I roasted the last of a Feb 2008 Rwanda Gkongoro Nyarusiza to a City+ this
week. It's resting and will try it tomorrow.
